From Soil To Storage

At Lounic Boerdery, every date begins long before harvest season. The process starts in the soil itself.

Farming dates in the harsh Northern Cape climate comes with its own unique challenges. With hot temperatures, dry conditions and naturally brackish water, great care is taken to keep the soil healthy and balanced throughout the year. We focus on using mostly natural and organic materials wherever possible, while continuously monitoring water consistency, soil moisture and root health around the trees.

A large part of our process is working with nature rather than against it. Branches from the palms are often chipped and placed back around the trees to help protect the soil and retain moisture naturally. Over many years, we have developed methods that work specifically for our environment and growing conditions in the Hantam region.

Protecting The Fruit

Once the trees begin producing fruit, each bunch of dates is carefully protected with net bags. These bags help shield the dates from birds, insects and harsh weather conditions while still allowing airflow and sunlight around the fruit.

From there, patience becomes part of the process.

The dates are left on the trees until they reach the correct stage of ripeness and natural sweetness before harvesting begins.

Harvesting By Hand

When the fruit is ready, harvesting starts by hand.

Our team carefully removes the dates from the trees while ensuring the fruit remains in the best possible condition. Every harvest season is the result of months of preparation, care and teamwork both on the farm and inside the packing facility.

After harvesting, the dates are transported from the farm to our packing facility in town where the next stage of the process begins.

Washing & First Sorting

Once the dates arrive at the packing facility, they are weighed in before moving onto the first sorting line.

As the dates move over the line, they are also carefully washed and cleaned before grading begins. During this stage, the fruit is checked for moisture levels, texture and overall condition.

Not all dates ripen exactly the same on the tree, which means every batch requires careful handling and attention.

Steam Rooms & Drying Rooms

One of the most important parts of our process is managing the moisture and ripeness of the fruit.

Dates that are slightly too dry are placed into specially controlled steam rooms to gently restore moisture and softness. Dates that are too wet are moved into drying rooms where they can slowly reach the correct texture and consistency for packing.

This allows us to maintain the soft texture, freshness and quality that our dates are known for.

Hand Sorting & Grading

Quality checked by eye, scale and hand.

After moisture balancing, the dates move over another sorting line where they are graded into different sizes and quality categories.

Although machinery assists with parts of the process, much of the sorting is still done by hand to ensure quality and consistency.

Smaller grades are often used for pitted products and other packaging options, while larger premium grades are packed for retail and export markets. Even the folding and preparation of certain boxes is still done by hand by members of our team.

Every Date Has A Purpose

Not every date is perfect, and that is part of farming naturally.

Dates with loose skin or cosmetic imperfections may be sold as local grades at more affordable pricing, while fruit with damage such as bird bites or squashing may be classified as industrial grade.

This approach helps reduce waste while ensuring that every grade of fruit still has value and purpose.

Cold Storage & Freshness

Once packed, the dates are moved into our cold storage facilities where freshness and quality are maintained until delivery.

Unlike many dry shelf dates found on the market, our dates are stored under carefully controlled cold conditions to help preserve their natural softness, texture and flavour.

Maintaining the cold chain is one of the most important parts of our business and helps ensure the product arrives in excellent condition.

Supporting Smaller Farmers

In addition to our own production, we also work with smaller farmers in the region who do not have access to their own packing facilities.

Their fruit is brought into our packhouse where it is weighed, sorted, graded and packed alongside our own production. This allows smaller growers access to professional packing and market opportunities while helping us increase supply volumes across different size grades.

It is something we take pride in as part of supporting agriculture within our region.
